The Best Cheddar-Onion Biscuits EVER!

Cheddar-Onion Biscuits

1 1/2 cups dry biscuit mix (like Bisquick)
1 1/2 Tbsp melted butter or margarine
1 egg
1/2 cup milk
1/2 cup chopped white onion
3/4 cup shredded cheddar cheese

Preheat oven to 400 degrees F. Mix all ingredients until just combined. Spoon batter into a greased or sprayed muffin tin. Bake for 12-15 minutes. Makes 6 large biscuit/muffins.

You'll thank me for this one!

One-Arm Saturday Night Dinner

Yes, every post title will contain "One-Arm" for the next few weeks.  If I have to suffer with this stupid-ass sling, so do you!

So... I made some more bread.  I know, I know.  Same old crap.  It's hard to be creative and new in this condition, but at least I'm posting!  No typing help today so it'll be short and sweet. I'm cheating and took the sling off just to type a tiny bit for you.  BAD GIRL!  I'm just a wild rebel like that.

This loaf turned out so high and beautiful. I was extremely happy with it, especially because I had messed with the recipe a little after reading some of the reviews.  More on that later.


We had tacos for dinner last night.  YUM.

And then a piece of home-made Cinnamon Raisin Toast for dessert.

So freakin' good!

I made the dough in the bread machine and waited until it beeped indicating it was time to add the raisins.  I took the dough out, added the raisins and mixed them in with my hand (notice the singular. ha.), plopped it into a sprayed loaf pan, and then I let it rise for an hour or two. It got really high! Then I baked it at 350 degrees F for 45 minutes.

A high percentage of the reviews I read on the recipe I found said that it was not sweet enough and didn't have enough cinnamon, so I added more of those ingredients in the below recipe.

Here are the ingredients as I made it:

Cinnamon Raisin Bread
Makes one large loaf (9" x 5" loaf pan)

1/ 1/4 cups warm water
2 pkgs (.25-oz each) active dry yeast
2 Tbsp butter, softened
3 1/4 cups all-purpose flour
1/2 cup white sugar
1 1/2 tsp salt
1 Tbsp cinnamon
3/4 cups raisins

I activated the yeast in the warm water with a little sugar before adding it to the other ingredients in my machine.

And then the Cowboys and the Packers. I hope the Cowboys win, but if they don't, I'm a Packers fan too so it'll be okay. (The Captain is from Wisconsin. Yes, I married a damn Yankee! In fact, I married three of them! Shhhhhh! Who said that? That's crazy! That would mean I've been married...shut up Pammy Sue! I gotta go.)

And that is an example of the difference between me typing my blog entries and The Captain typing them. I can't start to ramble and get myself in trouble when he types it. PLUS, my arm is now killing me and it took an hour. The sacrifices I make because I love you!

Ugliest One-Arm Cake

This morning I had visions of a fluffy white cake with caramel frosting. Instead I ended up with this...

It's not totally the fault of the one-arm baker. Somebody jumped in a chair and ate about 1/3 of the top layer off of the counter when I wasn't looking. I had the top layer sitting by itself on one counter while I worked at frosting the bottom two layers.  I always use the prettiest, most even layer for the top. When I turned around to go get the top layer, there sat a certain someone happily helping himself.

Lovely. I used it anyway and frosted it too.
(The ugly frosting job was entirely the one-arm baker's fault)
It'll still taste good with a cuppa joe.

I'm not naming any names, but...uh-huh, the thief!

One-Arm Brown Bread

We've been stuck in the house the past week with thick ice on the roadways, so I decided to make our own bread.  It's one of my favorite things to do anyway.  I made three different recipes, all which I found on AllRecipes.com, and they were all really good.  I used my Oster Bread Machine, but I'm sure you could just plop your dough into a loaf pan after you kneed it, let it rise, and bake it until it's nice and brown and sounds hollow when you thump it.

I love my bread machine and have definitely gotten good use out of it.  I'm surprised it still works because it's over 15 years old and gets a workout regularly.


Steakhouse Wheat Bread (My personal favorite)
Makes one loaf

1 cup warm water
1 pkg (.25 oz) yeast
1 Tbsp white sugar
1/4 cup honey
1 Tbsp softened butter
1/2 tsp salt
1 tsp instant coffee granules, pressed with the back of a spoon to powder it
1 Tbsp unsweetened cocoa powder
2 cups white all-purpose flour
1 cup whole wheat flour

Mix yeast in the 1 cup of warm water and 1 Tbsp sugar until the yeast activates and the top becomes foamy, about 5-10 minutes.  Add the yeast mixture and rest of the ingredients into your bread machine pan.  Use the basic bread setting and light crust setting.

Note: I've started activating my yeast like this lately after several failed batches of bread this past year.  It just wasn't rising properly for me.  I've had no trouble since I've started doing this and then adding it to my machine with the other ingredients.

Thanks to my sweet hubby for being my typist so I can post every now and then while I'm in this sling!  They will be short and simple, but at least I can put something up every couple of days.  I've been feeling so out of touch with all of you!  I read quite a bit today getting caught up with everybody.  My commenting will be sparse, but I did manage a few today.

How long until y'all think I am complete insane from not being able to crochet?  I haven't missed it yet because even if I had been able, I haven't felt like it.  I'm sure that won't last and I'll be dying to make something.

Winter Weather

We started getting freezing rain, sleet, and snow yesterday afternoon, and we're supposed to get a bit more tomorrow afternoon. It's not supposed to get above freezing until sometime after Sunday. Very unusual for this time of year here.

Our neighbors directly across the street lost their tree. It split right in half due to the heavy ice on the branches. There are several like this on our street. Bradford Pear trees are not very sturdy trees. They fall apart like matchsticks whenever we have a windstorm or ice like this.

The contraption I have to wear day and night for at least four weeks. You can't see it very well in this picture, but there's a long pillow attached to the sling with velcro that holds my arm out away from my body. I get to remove the big bandages on my shoulder tomorrow and just use Band-aids on them. Good news is today I feel like the pain is down a notch or even two. As long as I don't move that arm, I'm good.

Some of you have asked how I fell. Well...it was really, really, really a stupid move on my part. I stepped over a dog gate and lost my balance with one leg on each side of it. I tried to grab onto the door frame, but couldn't hold on and down I went. SPLAT! I am NEVER stepping over one of those gates again. And this time I mean it! 

How could I have been so dumb with my back the way it is and not even completely recovered from the surgery yet? No one ever plans to fall and bust their ass, but that's what happens when you start to get older. Your balance is off, your coordination and agility decline, and you just cannot do what you could when you were younger. It's hard to accept or even believe it, but I'm a believer now! It's just not worth it to take a chance. Move the gate and let someone else use the ladders and step stools.

I can't even type very easily. It's taken me 10 minutes to type all this out, and I can feel it throbbing in my arm. Work is out. Thank goodness I don't rely on it for our only income. I'd be sca-rewed!

I hope I can save just one person from taking a fall and hurting themselves the way I did by ranting here. Don't do it! You never think it will be you until suddenly it is. Stop and think, and then DON'T DO IT!

Surgery

Surgery tomorrow morning (Tuesday).  Jeez, he's not wasting any time!  I should get to come home by the afternoon.
