Okay, my pants are just tighter, but still.
I have to stop cooking and baking so much...
Or maybe just stop eating it?
I'm getting too much enjoyment out of it right now.
Cooking chicken thighs, sausage, onions, bay leaves, seasonings, and water. Rice will be added once the chicken is done and has been skinned and de-boned.
This is Paula Deen's Chicken Bog recipe. We love this. I've been making it for years now. Here's the finished dish.
Looks like slop, but it's GOOD slop!
2 lbs chicken thighs (with skin and bones)
2 lbs smoked sausage (I used turkey sausage)
1 large onion, chopped (about a cup)
1 stick of butter (I used 1/2 stick)
3 tsp seasoned salt like Lawry's
1 tsp black pepper
1 tsp cayenne (optional)
3 bay leaves
8 cups of water
3 cups of raw white rice (not instant)
Slice the sausage into 1/2-inch pieces. In a stockpot, combine the chicken, sausage, onion, butter, seasonings, and bay leaves. Add the water, bring to a boil, and cooked partially covered for 40 minutes on a low boil.
Remove the chicken to a plate to cool. Remove the bay leaves and throw them away. When the chicken is cool enough to handle, remove the skin and pick the meat from the bones.
Skim the fat off the top of the liquid in the pot. Chop the meat into chunks and place the chopped chicken back in the pot.
Add rice and bring to a boil, stirring well. Boil for 10 minutes then reduce the heat, cover the pot, and simmer for 10 more minutes or until the rice is done and the liquid is absorbed. Check often to make sure the rice isn't sticking to the bottom of your pan.
Serve with Louisiana hot sauce (like Frank's Red Hot).

I've been reading this book for the past 24 hours. I've read this series of books for years. They are always good. The first one I read was back in the early '90s and was called Eyes of Prey. I was hooked from the get-go. This one has been sitting in my bookshelf since Christmas last year. I finally picked it up yesterday when I was bored out of my mind and started reading. I just finished it a few minutes ago. In the first few pages of all these "Prey" books is a list of all of them in chronological order. If you want to read them, start from the beginning and you'll get more out of them and know what's going on with the references and stuff.
It felt so good to be wrapped up in a book! It's been so long since I've read a novel and really enjoyed it. Reading is good.
Before I got wrapped up in the book, I did get a good start on my Amineko Kitty. Poor thing is just pieces and parts right now, but he'll soon come together. It's been fun working on him too.

My first pumpkin dish of the season...
Pumpkin Pie Cake!
This turned out to be really good. It's a thin layer of pumpkin pie filling on the bottom and a crunchy, cakey, streusel-like top. It really is a mix between a pie and a cake. Very good.
Now to package it up and send it off to San Diego.
Also on the crochet front, I added six more rows to my Big Yellow Taxi Blanket while watching baseball last night. I keep crocheting on it, but it doesn't seem to get any bigger. I know it does, but it's hard to see at this point. There's still a long way to go.
The Captain has spent the last few days working in the backyard. He cut and installed this wood trim along the hedges. It looks good. Will be even better when the grass fills in next year.
These are the stones that were stacked along the hedges. Not sure what he's going to do with them yet, but it's something back in this corner of the yard. (I just typed yarn instead of yard and had to fix it. Ha!)
While moving all the stones, he displaced a bunch of geckos from their homes. I guess they'll set up house in the new habitat he creates with the stone.
Fletch was playing King of the Mountain last night.
He stayed up there for the longest time just looking around.
He reminded me of a billy goat.
I made some dip yesterday so we'd have some munchies for the race today. These brown rice Triscuits with sea salt and black pepper are good!
This was originally supposed to be filling for some tortilla roll-ups, but it was so good with the Triscuits I decided not to make the roll-ups and use it as dip instead. The ingredients are: 1 pkg cream cheese, 2 cups shredded sharp cheddar, 1 small can chopped black olives, 1 Tbsp dried onion flakes, 1 tsp garlic powder, 4 Tbsp diced jalapeno (from a jar).

I'm making another Amineko Cat with my brown yarns. He should be smaller this time since I'm using the sport-weight yarn. I love the process of making these. I just finished making his head this afternoon, as you can see. Now on to the body.

I took this picture in the backyard and didn't even realize how it looked until I uploaded my pictures to my computer. Kinda weird. It looks a lot like a lampshade double-exposure or something, but I don't have a lampshade that looks like that. I'm sure it had something to do with the sunlight coming through those trees and a lens flare of some kind, but it's still weird. I just made that up. I have no idea what a lens flare is or what causes it. Ha. It sounded good though.
I've taken to calling her that all the time lately instead of Janie. She seems to like it. Can you believe we've had her a year now? Almost to the day. I can't believe that trip was a whole year ago already.
1. Have you been watching the World Series? I have. I enjoy getting all involved and watching it every year.
2. I made sweet & sour meatballs today for our lunch. Sooooo good!
3. I went to a new (to me) cooking blog yesterday to look at a recipe I saw on a link party. The blog owner had put some sort of block on her blog so you couldn't copy and paste from it. It totally pissed me off! How stupid to have a recipe site and not allow people to copy and paste your recipes so you can use them! I started to leave her a pissy comment, but I decided it's her blog and she can do what she wants. But it's still really stupid and counter-productive if she wants people to read and use the recipes on her blog. I know I'm not going back, and I'm not making her damn recipe and posting it here with a link back to her either! Dumb-ass. I just got all mad again typing this.
4. I just saw that Brett Favre has come out saying that he has memory loss from playing football. I wonder if playing football made him take a picture of his penis and send it out in a text message too? LOL! Another dumb-ass. I was curious and Googled it when it first came out. Unfortunately, I found it. Looks kind of short and stubby to me. I'm just sayin! Don't put it out there if you don't want people to judge!
5. I'm having the urge to bake something. I guess I'll go in there and dig around the pantry and see what I've got.

I can't help it...I ordered more yarn.
Some browns in sport-weight. I have an idea about what I'm going to use these for, but you can't know yet. I'm all about the mystery.
And then I must have been in a pastel mood cuz I got pink, blue, peach, and off-white. They are softer colors than they appear here. I have no idea what I'm going to make with these. I'm sure I'll think of something.
And then I went shopping today on a whim and shopped my ass off. I was just going to the bank when all of the sudden I was at Macy's and Kohl's and Old Navy. I was looking for a new Levi blue jean jacket, but I decided against it and got this one instead. It's way more comfortable. It looks blue in the above picture, but it's really more of a gray tweed...

I also got a new winter bathrobe and some house slippers, several tee-shirts (long and short sleeves), and three pairs of earrings. Then I went through the drive-through at McDonald's for a late lunch. I hadn't been there in forever. The hot, salty fries were so freakin' good! I think my eyes may have rolled back in my head once or twice.
Anywho...I had a nice day all by myself. I prefer shopping on my own as I'm a little ADD when I shop. It either takes me three minutes or three hours -- nothing in between.
Speaking of ADD...
Look at the pretty grocery store flowers I got the other day.
These amber colored ones are my favorite.
I'm ready to make myself a cuppa, put my feet up, and snuggle with the K-9s for a while. I don't have to cook tonight because I made a big pan of baked spaghetti last night and we have tons of leftovers. We eat spaghetti a lot, don't we?
