Pecan Pie Bars

I decided to post this recipe because it is so darned good!  I'm posting the measurements for a 9 x 13 pan since that's what most people have and that's what I made.  I gave half of these to my mom and dad today because if I didn't, I was going to eat the whole freakin' pan myself!

Pecan Pie Bars
2 cups all-purpose flour
1/3 cup white sugar
1/4 teaspoon salt
2/3 cup margarine or butter
3 eggs
1 cup light corn syrup (I used 1/2 dark and 1/2 light)
1 cup white sugar
2 tablespoons margarine, melted
1 teaspoon vanilla extract
1-2/3 cups very roughly chopped pecans

Preheat oven to 350 degrees F. Lightly grease a 9x13 pan.

In a large bowl, stir together the flour, 1/3 cup sugar, and salt. Cut in the butter until mixture resembles coarse crumbs. Sprinkle the mixture evenly over the prepared pan, and press in firmly. Bake for 20 minutes in the preheated oven.

While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1 cup sugar, 2 tablespoons margarine, and vanilla until smooth. Stir in the chopped pecans.

Spread the filling evenly over the crust as soon as it comes out of the oven. Bake for 25 minutes in the preheated oven, or until set.  (Mine was done perfectly at 25 minutes.) Allow to cool completely on a wire rack before slicing into bars.

  1. H! I'm gonna make these to take to Thanksgiving instead of pecan pie. It's got my fav food group in it...BUTTER! These sound so yummy and I have corn syrup that I need to use up. My eldest bro will thank you, I'm sure. Happy day to ya.
