What's For Dinner?

I got this recipe at All Recipes a few years ago.  This is one of my hubby's favorite beef recipes.  He's a meat & potatoes man.  He likes this roast recipe because you can slice it into perfect slices of beef and they stay intact, unlike the roast you make in the crockpot that falls apart.  I like the latter better, but to each his own.  They're really two completely different dishes.

This is easy and will make your man happy.  While you're at the grocery store, grab an Eye of Round Roast (approx. 3 lbs), a packet or two of Beef gravy mix, a can or two of French Style Seasoned Green Beans, some potatoes to bake or boil & mash, some crescent rolls, and you're a hero at dinnertime, girlies!

All American Roast Beef

This is your basic, everyday Eye of Round roast beef, simply cooked to perfection. Serve it to family or company. The secret is in the time cooked: 20 minutes per pound at 375 degrees, uncovered.  Tent with foil for 15 minutes after removing from oven.  This makes a perfect, juicy, Medium-Rare Roast.  I can't tell you how to make a perfectly-done Well-Done Roast.  You're on your own there.

3-lb Eye of Round Roast
Salt, Black Pepper, and Garlic Powder

Preheat oven to 375 degrees.

Place roast in a pan or baking dish that has been sprayed with cooking spray.  Season with the salt, pepper, and garlic powder and rub it into the meat with your hands.  Roast in the oven for 1 hour (or 20 minutes per pound).  Remove from oven and cover loosely with foil.  Let rest for 15 minutes before slicing and serving.
